The scones fad has officially landed on our shores! A classic English treat served at high teas, Chef Mimi’s scallion scones are perfect when it’s hot and slathered with some good quality French butter. Get that savory and sweet umami flavors bursting in your mouth with these scones!

Serves 4

Ingredients

  • 190 Grams All Purpose Flour
  • 2 Grams Baking Powder
  • 1 Gram Baking Soda
  • 8 Grams Sugar
  • 75 Grams Unsalted Butter
  • 115 Grams Full Cream Milk
  • 1 Tbsp Apple Cider Vinegar
  • 90 Grams Cheddar Cheese Grated
  • 20 Grams Scallions Finely Chopped
  • 2 Grams Salt
  • 1 Gram Ground Black Pepper

Instructions

  1. Preheat oven to 180 degree celsius.
  2. Combine milk and apple cider and let it stand for 20 minutes to create buttermilk
  3. Chop spring onion finely.
  4. Combine flour, baking powder, baking soda, black pepper and salt in a mixing bowl.
  5. Rub in cold cubed butter into the dry ingredients.
  6. Mix until it resembles large pieces of peas.
  7. Add buttermilk, grated cheedar cheese and chopped green onions and mix slowly.
  8. Fold in the dry ingredients until the dough is all well-mixed.
  9. Chill the dough for about 30 minutes in the fridge.
  10. Roll out to 2.5cm in thickness and cut to a desired shape usuing a rolling pin.
  11. Brush the top of the scones with egg wash and sprinkled with sea salt.
  12. Bake at 180 degree for about 25-30 mins.
