Season 2 Episode 5 | Chicken Rice Recipe

Our hawker favourite is very easy and surprising fast to make. With fluffy and light rice, our chicken rice recipe is great for those midweek lazy dinners, especially when all you are using is a big wok!

Serves 4


  • 50 Grams Ginger
  • 6 Pieces Pandan Leaves
  • 710 Grams Basmati Rice
  • 4 Tablespoon Olive Oil
  • 475 Millilitres Chicken Broth
  • 8 Parts Chicken
  • 10 Cloves Garlic
  • 6 Pieces Shallots
  • 1.5 Teaspoon Salt



  1. SLICE ginger after removing the ginger skin.
  2. WASH pandan leaves.
  3. RINSE basmati rice and put in a pot.
  4. CLEAN and wash chicken thighs.


  1. HEAT olive oil in the pot.
  2. SAUTÉ garlic and shallots till fragrant and almost golden brown.
  3. ADD in rice. Well-coat it with garlic and shallot oil.
  4. MIX the salt together with the chicken stock.
  5. ADD chicken stock into the pot with the rice.
  6. ARRANGE the slices of garlic and pandan leaves on the bed of rice.
  7. ADD in chicken pieces.
  8. COVER pot with lid.
  9. COOK on the lowest heat for 20 to 25 minutes.
  10. MIX sauce in a separate bowl.
  11.
