Who says you need to wait for Eid to be eating these delicious crunchy Cornflake Meringue goodness that melt in your mouth? Now you don’t have to order them from your Eid goodies baker since you can already bake them on your own!
Serves 50 Pieces
- 3 Pieces Eggs
- 240 Grams Chocolate Chips
- 200 Grams Icing Sugar
- 150 Grams Cornflakes
- 1 Teaspoon Vanilla Essence
- 1 Teaspoon Cream of Tar Tar
Preheat oven to 160 degrees celsius.
Separate egg whites and age it for 2 days
Whip egg whites till bubbly.
Gradually add in icing sugar into the egg white, then add in vanilla and cream of tar tar.
Continue to whip until stiff peaks.
Mix half of the egg white mixture to half of the cornflakes. Mix well.
Divide the cornflake and egg white mixture into small baking cups.
Bake at 160 deg for the first ten minutes, then bring down the oven temperature to 130 deg and bake for a further 30 minutes. Bake until the top of the cookie is dry.
Do the same for the rest of the egg white and cornflakes. Do not mix all the cornflakes and egg white together as this will lead to the cornflakes losing its crunchiness.
