Let yourself be taken away to distant Turkish and Mediterranean lands with our Baklava recipe. This sweet treat will surely tickle your taste buds, especially the sweet toothed.

Serves 3-4 pax



  • 720 Grams Walnuts
  • 720 Grams Almonds
  • 80 Grams Caster Sugar

Sugar Syrup

  • 3/4 Teaspoon Ground Cinnamon
  • 125 Grams Unsalted Butter
  • 375 Grams Filo Pastry
  • 240 Grams Caster Sugar
  • 1 Piece Cinnamon Stick



  1. PRE-HEAT oven at 180 deg celsius.
  2. SMASH walnuts and almonds or process them in a food processor until finely chopped. Beware not to over process the nuts as they may become oily.
  3. TRANSFER into a large bowl and MIX well.
  4. UNROLL filo pastry on a large chopping board and cut it according to size of baking pan and discard trimmings.
  5. BRUSH base and sides of a baking pan with butter generously.
  6. COVER filo pastry with a slightly damp towel to prevent the sheets from drying out.
  7. PLACE the cut filo pastry in the baking pan and brush with melted butter.
  8. REPEAT process with 2 sheets of filo pastry, and layer the nuts mixture.
  9. REPEAT steps 7 and 8 and top the layers with 3 layers of filo pastry, and brush the top well with butter.
  10. PLACE baklava in freezer to firm (optional).
  11. BAKE the layered baklava for about 10 minutes at 180 deg celsius.

Sugar Syrup

  1. BOIL water in a saucepan.
  2. ADD sugar and cinnamon stick.
  3. BOIL the mixture over high heat, and stir until everything is dissolved.
  4. REDUCE the heat to a medium.
  5. SIMMER for 3 minutes.


  1. REMOVE baklava from oven after 35 minutes.
  2. CUT baklava into smaller sizes and according to shape as desired.
  3. BAKE the baklava again after cutting, for 20 minutes.
  4. REMOVE baklava from the oven and pour sugar syrup over the whole baking pan.
  5. ALLOW the baklava to rest for 1 hour, best serve before consumption.
